I've printed my track plan and laid it onto my boards.
How is now best to physically lay the track and then be able to remove the paper?

You could just pull and rip it out after the track has been pinned down. Pin the track loosely will help.
You could even leave it there and add the ballast. (Some modellers spray paint over the track and pick out sleepers individually by dry brushing. You may need some careful covering over pointwork prior to spraying? They then paint the sides of the rails also).
Probably the easiest option is the first one.
