Thanks everyone for all the information!It's been very helpful! I've looked at all the stations recommended and come to the conclusion that Ashburton or frome would be best!? I'm thinking at the moment an edited version Ashburton would be best with the 00 guage on the inside of the overall roof and adding an extra bit of platform (on the outside) to the right hand side to cater for the narrow guage!
For the actual 'scratchbuilding'.I'm thinking of perhaps the two sides of a kit shed and making the roof from scratch. e.g-Perhaps 2-3 of:

or (if I was willing to spend extravagant amounts)20 of these:
