The issue here is that I believe Longvallon is modelling in 7mm narrow gauge. The chassis of the 4 wheel coaches can be used. Unless Longvallon wants to run both 7mm narrow gauge and 00 gauge together?

Nice work with your coaches. But I like to keep my locos and my rolling stock exactly as they are.

I bought two other Hornby blue coaches (I like this blue):

Yes, the tighter the curves the more critical coupling choices become.
Alternately if small inconspicuous couplings are a priority then there may be less freedom to use tight curves.

"Want Both" is not impossible, but it can mean the underside of wagons and coaches gets complicated, or the ability to break up trains is sacrificed.

I modified my own Hornby couplings to one hook, centred, with a delayed uncoupling action.
The sacrifice there (as with your coaches) is that the stock is single-ended. No return loops or fiddle yard train turntables can be allowed.

Bad news. My cheap Mehano controller doesn't work anymore. Yesterday, I put a very old Roco diesel on the track. This locomotive ran well for a few minutes when my controller started to smell a very disgusting odour and die.

Right now I'm using an old Bachmann controller and everything works fine.
