Powering points

Could I use a generic power transformer for powering points? Say if I found one with an AC output of 1A at 16V? As the controller I have doesn't have an accessory output.

Yes, as long as it's safely insulated and constructed. Don't try to use a bare transformer on it's own, it would be extremely dangerous.
